AreoPress with manual grinder 5 clicks vs 10 clicks
AreoPress works similar as Moka pot but the pressure builds up while we press down the piston, the finer of the coffee ground, the more extraction, but not like espresso, the AreoPress extraction pressure will not build up to 9 bars, and the wet to dry ratio is around 8 to 1. I will expect to the grind size should be similar to Moka to get a balanced cup

Expected difference5 clicks with espresso ground size might be too fine for Areopress to work with, it might end up with a sharp, bold and bitter taste. Blue moon bean from Bali seems not that dense compare with other beans in every level of roast, for most of brew method, need finer ground to get balanced cupping compare with other beans. so that might surprise the result

05-30-2024EPR m to D moka 0.5 oz to 10oz wtd 10 hand grind 60F charge vs aroepress 0.5 oz to 10 oz wtd 10 clicks hand grind Moka should toward sweetbitter and less taste of origin notes as high temperature extraction may overwhelm. As expected, but both cupping are in it own method of balancing, both are full smooth body. Moka cupping is more bold with bitter and smoky , aroepress cupping is more spice and sweet. both with strong cedar, chocolate and buttery aroma, Moka cupping with a little more sharp and smoky. This bean is overall earthy more than other beans although this bean from Bali is the least earthy one, it is very noticeable when first switch from other beans, will get use to it while more cuppings have been done I personally do not favor earthy taste but it is also ok to have it in coffee as addon flavor note.
overall this EPR M to D roast took too long on brown and development cycle which did end up flat feeling even in moka
05-30-2024EPR MTD 03 oz espresso 5 grind size, wtd 1 oz vs 1.5 oz – final to 3 oz Cortado1.5 oz should be sharp and bitter due to the over extraction as expected, 1 oz shot is sweet and a little bit fruity sour taste to me , but overall balance and smooth, 1.5 oz shot is bitter and sharp , still very smooth and bold body. Final to 3 oz Cortado from first top layer with milk taste very similar but at the end still back to the original espresso taste.
06-02-2024EPR M pour over 0.6 oz to 10 oz , 12 clicks, 89F, clay filter vs metal filterClay filter cupping should be more bold and rich in flavor Coffee penetrates through clay filter capillary wall which is way different from a metal filter with holes, regardless how small the holes and how dense they distributed on the filter, they works different as clay’s capillary penetration. I used three arounds pour over, the first around has almost the same brew time, but the second around , the clay filter need more time, and third around is almost double the time, I think the fine coffee ground runs through capillary wall of clay may clot and slow the penetration.
the clay filter cupping looks clearer and darker, Aroma is almost the same for both cuppings, clay filter cupping did taste sharper but actually less bitter than metal filter one. I think the penetration method did build up a little bit more pressure which help to extract more flavor rather than wash the bitter at the end for metal filter.
06-03-2024Taste each round of pour over from a 3 rounds pour over method, EPR M , 15 clicks , 89F, 0.6 oz to 10 oz First round should be full origin notes, second round should be roast flavor and third round should dilute the overall bold body16.67 wtd is north side for me, specially with 15 clicks grind size, the first round is as expected , sweet , fruit sour , no biter at all, but also taste not like a regular coffee , more like a fruit tea , so if I want to taste the origin notes, this is perfect with any roast flavor overwhelming them.
the second round did add a lot of roast flavor, more sweetbitter, to me this is perfect stage of taste origin plus roast notes. but the cupping still is sharp and bold. if you do milk over instead of black, this is the perfect for that.
the third around washed bitterness and all earthy flavors into cupping, it did smooth out overall.

I have my ideal pour over in general for all the beans , medium roast with 12 clicks on manual grinder, 89F water, 0.6 oz 3 rounds pour over to 9 oz 1:15 dtw.
I would like to see how immersion during the pour over process impacts the extraction of the bean’s original and roast flavors

Cupping summaryFully soak and immersion drip creates balanced and smooth with fully origin flavor during the extraction process. I still do not know how exactly the immersion drip process impact the cupping result, after all, they are all the same amount of water flow through same amount of coffee ground. I think the time for the coffee ground soak in the water and drip out in a fast pace makes the cupping different compare with a consistent drip process.

04-10-2024Macchiato 032oz to 1 oz single shot, Brellive single shot portalfilter, grind size 5 vs 7 on medium to dark5 should be more balanced and 7 should be towards sour and crispynot as expected, the 7 and 5 grind size seems not matter too much, both ran into the upper level presure of extraction, dripping and dropping indicate over extraction for both. 0.32oz seems too much for a single shot portalfilter. both tasted the same, towards bitter , still maintan to be creamy and bold in flavor, medium to dark may help to balance a little.
04-12-20240.5 oz hand grinder at 10 clicks to 7 oz dtw, moka with 69F charge temp vs areopress at 89FMoka should be bold but with all enhanced notesas expected, but Moka seems over extracted with bold smoky bitter taste, Areopress has stronger aroma sweet and cheery, taste more balanced and smother , the looks of cupping are different as well, areopress has clear dark brown as moka is creamy but turbid. I think the grind size is too fine for moka pot . Prefered Areopress with 10 clicks (espresso grind size)

We consume about 3 oz of coffee per day (2 brew in the morning and 2 espresso in the afternoon) 8 oz in 4 different level of roasts will last about 10 days, and I am always do A/B comparison on different dial in to learn how to handle different beans in different level of roast with different brew method on different equipment.
For each bean, I will document with video on one set of cupping in detail , for rest of cupping , I will put as simple result notes

04-01-2024Moka 0.6 oz to 7.8 oz (1 to 13 DtW) , at 9 clicks hand grind, Medium vs Dark Dark should be bold but more balance than Medium toward crisp and sournot as expected, Dark is too bold with intense bitter, Medium has beautiful fruit and sweet aroma and taste the same as well, can be dialed to less sour with medium to dark. balanced preference Medium to Dark, personal preference: medium to dark
04-02-2024Americano 0.1oz (Medium to Dark) to 1oz single shot to 7 oz (86F water) final. 5 grind vs 3 grind in espresso by Breville3 grind should be more balanced and 5 grind should towards sournot as expected, 5 grind at mid extract pressure gave a little bit sour in espresso , but after pouring the water, it makes perfect sweet & fruity taste , 3 grind tasted ok in espresso, but became flat and crispy once pour water in and make to Americano. Personal preference: for Americano, dial espresso to the balance but left to a little bit sour to extract more nutty and fruity rather than roast and burnt
04-04-2024AeroPress 6.7 oz on Dark , 92F water, 10 clicks with 0.5oz vs 14 clicks with 0.6oz similar taste as the more grounds cancel out the clicks as expected, 10 clicks with 0.5oz drip a little bit more before apply press, very similar aroma and taste, smooth, fruity, sweet with a little crisp bitter at the end.
