Organic Ramirez Red Honey Jarabacoa Dominican Republic – Bean

Observations

Red Caturra:
Red honey process applied unevenly , we have 40% of bean with light green/blue color with no wrinkle skin , and about 60% in light brown/yellow color with visible yellow skin covered (most of them cover certain potion of body, about 10-15% covers the whole bean)
I think this might due to the fresh cheery might have different ripeness, so the same time fermentation remove different degree of fruity body when process through the machine.
this makes roasting very challenge as the ones with skin tends to turn to dark color quicker but inner temperature raise slower , it ends up an uneven roasting
overall beans are in similar size, 3.5/10 to 4/10 inches.
for the beans with yellow wrinkle skin with light fruit sweet taste , after that, bean meat is fresh grass with very nutty aroma
Bean is very dense, inner layer is a little bit bitter taste then a little bit fruity
the beans with no skin has no outside sweet taste, other than that, very similar.

Overall (rate 6/10): very dense and heavy , high quality ,even size, – with partial beans with wrinkle skin only
